Fillets and whole fish for the week. Most of our fish is chosen at the Gothenburg fish auction on Wednesday morning and reaches Switzerland on Thursday, so the selection follows the season and the week's catch.
In season now: wild Norwegian halibut, at its best from November – firm, white and mild, lovely simply pan-fried in butter.
From our range: cod fillet, salmon fillet, mackerel fillet, haddock fillet, monkfish fillet and whole turbot – plus lemon sole, witch sole and sander (zander) fillet from Lake Hjälmaren, the Swedish freshwater classic.
By weight: fillets are cut by hand to the weight you choose, from 300 g. Prices run from CHF 59 per kg (haddock) and CHF 69 (salmon, cod, mackerel) to CHF 118 (halibut, monkfish); 300 g is a main course for about two.
