Description
Fresh haddock fillets from the Gothenburg fish auction in Sweden: large white fillets with a mild, slightly sweet taste and soft flakes – the classic choice for fish and chips, fish cakes or simply pan-fried in butter.
Early in the morning we go through the boxes landed by the fishing boats, pick the freshest, finest haddock and cut the fillets by hand to the weight you order.

We always aim for the exact weight you order. Every piece is cut by hand, so it can differ slightly, and when it does, you usually get a little more rather than less.
How to cook it
Easily prepared by pan-frying with lemon, salt, pepper and a generous amount of butter, or breaded with flour, egg and breadcrumbs for a proper fish and chips.
We buy your fish at the Gothenburg fish auction on Wednesday morning, then cut and pack it fresh for you on Thursday morning. Ready in Zollikon from Thursday, delivered to your door on Friday, or ready at Morges market on Saturday.
Good to know: haddock is Schellfisch in German and églefin or aiglefin in French – both French spellings are correct. It is a close cousin of cod (Melanogrammus aeglefinus), a little sweeter and softer, and the classic fish for fish and chips in Britain.

We choose our fish and shellfish at the Gothenburg fish auction every Wednesday and drive it to Switzerland ourselves. Order by Monday 22:00 for delivery on Friday or free pickup. Or come by and choose for yourself: our shop in Zollikon is open Wednesday to Saturday, and our stand at Morges Market every Saturday.
