Description
Swedish lobster is the taste of autumn on the Swedish west coast: the season opens in late September and is short, which makes it a real treat. We pick our lobsters by hand from newly arrived live lobsters, sort them by size and weight, and cook them to the minute with dill salt and beer, the Swedish way.
How to serve it
- Chilled and cut in half, as a starter or main course with aioli, bread and a green salad
- As the centrepiece of a seafood platter with shrimps, langoustines and crab claws
How to cut it in half: place the tip of a large kitchen knife on the cross at the top of the head and cut firmly down through the back. Turn the lobster around and cut through the rest of the head.
