Sander (zander): the Swedish freshwater fish from Lake Hjälmaren
October 27, 2026 – Fiskskaldjur
Sander (also called zander or pike-perch) is a freshwater fish prized across northern and central Europe for its lean, firm, white flesh and delicate flavour.
Our sander
Our sander fillets come from wild fish caught by local fishermen on Lake Hjälmaren in Sweden, and are a good choice year-round. We cut and pack them fresh on Thursday morning.
How to cook it
- Season the fillet with lemon, salt and pepper and drizzle with olive oil.
- Bake in the oven until the fish flakes easily. Its firm flesh holds together well.
- Alternatively pan-fry in butter, skin side down first.
What to serve
- Roasted vegetables or potatoes.
- A cold sauce: roe sauce or a crème fraîche sauce with herbs.
- A dry white wine; see what to drink with Swedish seafood.
Good to know
- Storage: in the fridge at 0–2 °C, three days (see the product page).
- Compare with other white fish in which white fish to choose and the three easy fish dinners.
Allergens: fish.
