Räkmacka: how to make the classic Swedish shrimp sandwich
October 27, 2026 – Fiskskaldjur
The räkmacka is Sweden's beloved shrimp sandwich: an open sandwich piled high with shrimps. It is served in cafés, at lunch counters and at the weekend table, and it takes about ten minutes to make.
Ingredients (for 2 sandwiches)
- 2 slices of good bread, such as a sturdy white or sourdough loaf
- Soft butter
- A few lettuce leaves
- 1 boiled egg, sliced
- 150–200 g peeled shrimps, well drained
- Mayonnaise or aioli
- Fresh dill and a lemon wedge
Method
- Butter the bread generously, right to the edges. The butter keeps the bread from going soggy.
- Lay the lettuce on top, then the egg slices.
- Pile on the drained shrimps.
- Add a spoonful of mayonnaise, a sprig of dill and a squeeze of lemon.
Tips
- Drain the shrimps on kitchen paper so the sandwich stays crisp.
- For a more festive version, use fresh cooked shrimps and peel them yourself.
- Prefer a ready-made filling? Spoon classic skagenröra onto buttered bread instead, see our skagenröra guide.
Keep shrimps refrigerated at 0–2 °C until serving. Order by Monday 22:00 for Friday delivery or free pickup in Zollikon and Morges, see delivery.
Allergens: crustaceans (shrimps), eggs, and gluten in the bread.
