Wolffish Fillet

Sold by weight – CHF 88 per kg. Choose how much wolffish you want in steps of 100 g, from 300 g to 2 kg; need more, simply increase the quantity. We cut and pack your fish fresh on Thursday morning, straight after the Gothenburg fish auction.

We always aim for the exact weight you order. Every piece is cut by hand, so it can differ slightly, and when it does, you usually get a little more rather than less.

The fresh wolffish fillets from Gothenburg, Sweden, are a great choice from spring to autumn. Firm, white and mild, it holds together beautifully in the pan and on the grill.

Bake in the oven with lemon, salt, pepper and olive oil until the fish flakes easily, or brush with BBQ oil, season with smoked paprika and grill. Serve with roasted vegetables and a cold crème fraîche sauce.

At the auction we inspect the boxes left in the early morning by the fishing boats and select the freshest and finest wolffish.
