Description
The fresh whole turbot from Gothenburg, Sweden, is of exceptional quality, freshness and size. Turbot is an exclusive fish, and the Swedish turbot is very firm thanks to the perfect conditions on the west coast.
At the auction we inspect the boxes left in the early morning by the fishing boats and select the finest turbot.

A whole fish never weighs exactly the same, so the size you choose is approximate. We always aim as close as we can, and when it differs, you usually get a little more rather than less.
How to cook it
Easily prepared by roasting whole in the oven: season with lemon, salt and pepper, put some butter on the baking tray and roast at 100 °C for about 2 hours. Enjoy with our roe sauce or a cold crème fraîche sauce.
We pick the turbot closest to your chosen size at the Gothenburg fish auction on Wednesday morning. Ready in Zollikon from Thursday, delivered to your door on Friday.
