The fresh halibut fillets from Norway are a great choice, available year-round but has its prime season starting in November. Halibut is a large flatfish known for its firm, white flesh.
 

The finest halibut fillets are selected from Norway, where the fish is caught in the cold, clear waters. This high-quality fish arrives fresh from norway each morning where we hand-pick the finest ones after being filleted 
 

The fresh halibut fillets are best prepared by baking in the oven. Season the fillets with lemon, salt, and pepper, and drizzle with olive oil. Bake until the fish is tender and flakes easily with a fork. When served with roasted vegetables and a fresh cold sauce, either our roe sauce or a crème fraîche-based sauce, you have an exclusive dish to be enjoyed.
 

At the auction, we inspect the various boxes left in the early morning by the fishing boats in Norway. We then select the freshest and finest halibut of the highest quality by meticulously inspecting the fishfillets.
