The cod loin is available year-round but has its special season from January to March when the norwegian "Skrei" are caught and the cod are very thich and firm due to the cod's muscle build-up when it swims in strong currents.
The fresh cod loins are easily prepared by baking in the oven. Season the loins with lemon, salt, and pepper, and place them in a baking dish with a drizzle of butter or oil. Bake in a preheated oven at 180°C for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. The internal temperature should reach 60°C.

At the auction, we inspect the various boxes left in the early morning by the fishing boats in Gothenburg, Sweden. We then select the freshest and finest cod loins of the highest quality by meticulously inspecting the fish in the boxes.
